Lactate potassium is a potassium salt of lactic acid ( lactic acid potassium). Used in the food industry as a food additive E326 as an acidity regulator, a water-holding agent, emulsifying salt, an antioxidant synergist.

Application
Potassium lactate is used as a substitute for table salt , as a plant tissue sealer in the processing of fruits and vegetables. Antioxidant properties allow it to be used with other antioxidants in frozen products with a long shelf life to prevent oxidative damage to fats .
