Mintai caviar is a food product produced by commercial fish pollock [1] . The largest consumer of this type of caviar is Japan, which accounts for 90% of the total market volume, estimated at $ 1.9 billion [2] .
The caviar is small, has a puree- like consistency and looks like a whitish-beige paste [1] . It has a strong fishy smell and bitter taste.
Large yasks (caviar bags) without defects (marks of blows, eggs of non-uniform size, etc.), which are salted and smoked, are most appreciated [1] . In addition, pollock caviar is added to spaghetti sauces and salad dressings, spreads, etc. [1] . Low-quality caviar sprinkled with salt, add garlic , monosodium glutamate , chili pepper . Tarako, a popular ingredient in Japanese cuisine, is produced from small yastik [1] .
In Korean cuisine, pollock roe has been used as a chotkal since at least the 17th century: the magazine of the royal secretariat "Syngjonwon-ilgi" ( cor. 일기 ) says that pollock roe was served instead of cod, and on this occasion it was recommended to conduct interrogation of those responsible 2] . The exact date of the start of the use of pollock roe in Japan is unknown; according to one version, this happened in the first half of the 20th century, when the dish penetrated into Japan from occupied Korea [2] .
