Mintai caviar is a food product produced by commercial fish pollock [1] . The largest consumer of this type of caviar is Japan, which accounts for 90% of the total market volume, estimated at $ 1.9 billion [2] .

In Korean cuisine, pollock roe has been used as a chotkal since at least the 17th century: the magazine of the royal secretariat "Syngjonwon-ilgi" ( cor. 일기 ) says that pollock roe was served instead of cod, and on this occasion it was recommended to conduct interrogation of those responsible 2] . The exact date of the start of the use of pollock roe in Japan is unknown; according to one version, this happened in the first half of the 20th century, when the dish penetrated into Japan from occupied Korea [2] .
