Prosper Montagnier ( French: Prosper Montagné ; November 14, 1865, Carcassonne , France - April 22, 1948, Sevres , France) - French chef, author of books and articles on culinary and gastronomy , primarily fundamental work on French cuisine Larousse Gastronomique .

Montagnier was born in Carcassonne in the department of Aude . After graduating from the lyceum, he was going to become an architect, but this turned out to be impossible. His father purchased a hotel in Toulouse , where Montagnier became a chef.

He studied professional skills at the Paris Grand Hôtel and Hotel d'Angleterre in Cotreux , then worked at various restaurants in Paris and San Remo , as well as at the Hôtel de Paris in Monte Carlo . Since 1900 he worked again in Paris, was a chef at Pavillon d'Armenonville, Pavillon Ledoyen and, finally, Grand Hôtel , where he stayed for 10 years. After that, he opened his own restaurant Montagné and advised the chefs La Reine Pédauque.

Montagnier was the author of many books on culinary, including Le grand livre de cuisine , considered his best work; La grande cuisine illustrée , Larousse Gastronomique ; Bonne chère, pas chère , La cuisine diétique , Les délices de la table , Le livres des cuisines militaires , Mon menu and Le festin occitan . He also published articles in periodicals and was editor-in-chief of Revue culinaire magazine.

According to the Encyclopedia Britannica , Prosper Montagnier was France’s second-largest chef after Carem . Unlike its predecessor, Montagnier quite early came to the conclusion that Monte’s plays (edible table decorations) and elaborate side dishes were unnecessary ^[2] .

The name of the chef is Club Prosper Montagné, a professional French food service association ^[3] .

In 1922, Montana became a holder of the Legion of Honor .
