Salamour

Salamur with Loban

Salamur is a culinary term that has several meanings. Most likely comes from the Latin salis - "salt". In Russian, it is most often used with the meanings:

  • 1. Brine (with spices).
  • 2. Dish - pickled fish.
  • 3. Sauce .

In Ukrainian Bessarabia and Podunavye, salamur is a sauce based on salt, garlic, spices, vinegar, vegetable oil and fish broth, served to the ear. In Romania ( saramur ) and Bulgaria ( salamura ) - just a pickle, as well as a fish dish, salty soup. In Turkey ( salamura ) - pickle or pickle. Also in Ukraine, “salamurite” means pickling meat for barbecue.
