Borgoy mutton is a special kind of meat of sheep grown under specific conditions in the Dzhida valley near the Borgoy ulus. It is a meat brand of Buryatia .

Brand History
Borgoy mutton was once delivered to the table of the imperial house of the Romanovs [1] . Borgoy lamb was present on the gala dinner menu on the occasion of the coronation of Nicholas I [2] . In Soviet times, in the markets of Moscow, meat of Dzhidinsky sheep was sold with the label "Borgoy lamb" [3] [4] . It was sold in the famous Eliseevsky deli [2] .
Borgoy sheep live in ideal climatic conditions and graze on solonchak lands. This gives a special taste to the meat known not only throughout the republic [5] . The value of dishes of meat of Borgoy mutton is mentioned in a number of books, publications and guides [6] [7] .
In Soviet times, Borgoy mutton was considered one of the best varieties in the country and even had great demand abroad. The glory of the Borgoy mutton attracted the attention of Soviet filmmakers who shot the film “Borgoy Shepherds” [8] .
In the area near Beloozersk , which received the name from the location of the White Lake next to it, in spring salt - khuzhir emerges from the ground. Salt appears from the water in the lake, which by its chemical composition is very dense in itself. Salt mud has healing properties [2] .
In spring winds, salt dust rises into the air and spreads to nearby pastures where sheep graze. And it is this salt that later affects the meat, rewarding it with unique taste properties [2] .
Research shows that mutton contains more than other types of meat, unsaturated fatty acids, very little cholesterol, and high mineral content. Also in this type of meat there is a sufficient amount of valuable components and trace elements, including easily digestible proteins, phosphorus, magnesium, calcium, selenium, vitamins B, E, K, PP, etc. [1]

After the collapse of the USSR and the collapse of collective farms, the brand of Borgoy mutton was threatened with extinction [9] . The change in the botanical composition of grasses in the Borgoy steppes was also detrimental [10] . Currently, active work is underway to maintain and promote this brand. The Dzhidinsky district , where the Borgoy steppe is located, is considered the meat region of the republic [11] .
The Borgoysky breeding factory is one of the largest agricultural enterprises in Buryatia . The enterprise is among the leaders in the number of sheep of the Buryat type of the Transbaikal fine-fleece breed [5] . The enterprise was founded in 1927 and has since been engaged in breeding and breeding work for sheep breeding [2] . According to R.P. Pildanov, Buryat-Mongolian coarse-haired sheep of the Borgoysky state farm for 4–4.5 months. the pasture period increased live weight from 38.9 to 47.5 kg, or 22.6% [12] [13] . The head of the Chechen Republic Ramzan Kadyrov asked Buryatia to provide several sheep for breeding this breed in Chechnya [2] . Currently, Borgoy mutton claims to receive the status of the official brand of Buryatia [11] [14] .
