Vanuatu cuisine ( bisl. Aelan kakae ) includes fish , root crops such as taro and yams , fruits and vegetables [1] . Most island households grow food in their gardens, which is why food shortages are rare [1] . Papaya , pineapple , mango , banana and sweet potato are grown for most of the year [1] . Coconut milk and cream are used to flavor many dishes. Most of the food is prepared using hot stones or by boiling and steaming; a small portion of the dishes are fried [1] . Since Vanuatu is one of the few South Pacific regions influenced by the outside world, Vanuatu's cuisine is multicultural.

Main Ingredients

Several basic ingredients are used to prepare Vanuatu cuisine, including yams , taro , banana , coconut , sugarcane , tropical nuts, meat , herbs , poultry, and seafood . Indigenous people in Vanuatu usually produce most of their food on their own, with the exception of foods such as rice or canned fish [2] .

Traditional drinks

Kava , a traditional soft drink , is extremely popular in Vanuatu . Once a prestigious drink made from Piper methysticum , it is usually drunk at dusk, before dinner, mostly men, but more often women. The drink has a mild narcotic and relaxing effect on a person, but is mainly valued for the relaxed atmosphere with which it is traditionally associated, both in urban and rural areas (in particular, it is popular in the country ).

Traditional dishes

Vanuatu's national dish is paw-paw [3] - baked pudding. It consists of grated yam , banana , cassava or taro . The ingredients are mixed with coconut milk and salt , then baked under hot stones [4] .

Another popular dish is simboro . The dish is similar to dolma , it is a pair of meatloaf in which grated meat , cassava , yams , taro or flour are wrapped, wrapped in banana leaves and covered with coconut milk .

Stew foxes are also hunted stewed .

Coconut crab is one of the unique species in Vanuatu. However, many restaurants on the islands have ceased to offer this dish, since the crab is on the verge of extinction [4] .
