Katogo is a traditional Ugandan dish , based on starchy bananas and sauteed meats, meats, by-products or beans.
Origin
Katogo comes from Western and Central Uganda , where it was originally considered food for the poor. This dish is currently known in most Uganda regions and is most often served for breakfast. Popularity led to the emergence of many options for catogo. It can change as a basis - for example, instead of a matok, sweet potatoes or cassava are taken, as well as sauce ( offal , beef, peanuts or beans).
Cooking
Despite the many varieties, the main is the one where the basis is made up of the sap, and the sauce is made from offal. Uroke is a special type of starchy green banana, usually steamed. For catogo, at first a gravy is prepared on low heat, then the uterus is stewed with it until tender.
