Production
According to the Tequila name protection declaration (DOT), only alcoholic beverages made from blue agave grown in officially established areas of Mexico can be labeled as “tequila”. These regions include the entire state of Jalisco , the three adjacent states - Guanajuato , Michoacan , Nayarit , and the state of Tamaulipas on the east coast. Olmeca tequila is produced in the state of Jalisco in the municipality of Arandas . For the production of used variety of blue agave - Agava Tequilana variety Blue Weber, which grows over 7-8 years. The core of the plants is subjected to heat treatment in the oven for 36 hours, after which they are pressed to separate the juice and syrup from the fibers. Yeast is added to the resulting wort, as a result of fermentation, an alcoholic beverage is obtained, which is distilled twice in copper distillation apparatus [1] .

Olmeca brand is represented on the market by three types of tequila [2] :
- Olmeca (Blanco and Gold) - contains more than 51% of blue agave juice
- Olmeca Altos (Plata and Reposado) - contains 100% blue agave juice
- Olmeca Tezón (Reposado and Añejo) is a super premium class tequila, aged in barrels for up to 20 months.
