Goncharov, Mikhail Petrovich

He graduated from the Faculty of Computational Mathematics and Cybernetics (1990). In the difficult perestroika student years I worked on vegetable stores, in a cold-processing plant, in a student cooperative for washing windows ^[1] . He organized a search for orders for washing windows for a percentage of the cost of work ^[2] .

In the fourth year he started wholesale audio-video equipment and its delivery to major Moscow department stores ^[3] . He opened his company for the sale of equipment, expanding its range. Commercial Director of Tempinvest LLC (1991-1995) and General Director of Elastica LLC (1995-1998). Firms ceased to exist during the 1998 crisis ^[4] .

With the funds remaining after the business collapsed, he created the company “Teremok - Russian pancakes” (1998) ^[5] . The idea of ​​a new business arose in Goncharov, by analogy with pancake kiosks in Paris , and an understanding of the lack of competition in this market in Russia. On a long business trip to France dedicated to the study of business, I learned in local kiosks and restaurants recipes and methods for making pancakes, the composition of dough and added toppings. He refused the franchise of the brand “Crêpes de France” to Russia, having built his own business scheme ^[4] .

After Goncharov's letter with the company's business plan came to Yury Luzhkov , the Moscow Mayor's Office gave permission to put the first two kiosks on wheels on Maslenitsa (1998). Since 2003, the firm Goncharova began to open pancake restaurants at food courts of shopping centers ^[6] .

In 2011, according to CNN, “Teremok” got into the TOP-8 of the best fast food companies ^[7] . By mid-2017, 300 points in Russia and two in New York with an annual turnover of more than 8 billion rubles operated in the restaurant network created by Goncharov ^[4] .

In 2016, the company "Teremok" began redesigning restaurants. The update has affected all elements of the design of retail outlets: interior design, menus, dishes, branded pictograms and staff uniforms. During 2018, Teremok updated all points of the network at food courts (about 120 in Moscow and the Moscow region, about 30 in St. Petersburg), 8 street retail restaurants in Moscow and 6 in St. Petersburg were reconstructed. In the updated restaurants, the network abandoned the light menus in favor of a printed format without photos, which corresponds to the concept of fast casual and the new style of the network ^[8] .

The fall in revenues that has been going on for the last three years is forcing the network to cut costs, closing down losing points. If the advertising budget planned for 2018 does not help, “this is the end,” Goncharov (2017) tweeted ^[9] .

In September 2018, the Teremok restaurant chain unveiled the first android cashier, Marusya, who began working at the Columbus shopping center in Moscow and at the Nevsky Center shopping mall in St. Petersburg. Marusya was developed by Alpha Robotics specifically for Teremka. The manufacturer integrated the payment module into the design, and also wrote software that allows the robot to communicate freely with the buyer, offer Teremka dishes, place orders, accept payment by credit card and issue checks ^[8] .

At the end of 2018, “Teremok” is among the five largest companies in the fast food segment in Russia and demonstrates revenue growth. The company's turnover in 2018 reached 9.4 billion rubles, in 2017 this figure was equal to 8.3 billion rubles. In 2018, restaurants in Moscow, St. Petersburg and Krasnodar were visited by more than 30 million guests ^[8] .

In February 2019, Mikhail Goncharov opened in the Gastromarket “Depot” an institution of the new format “Pripyok”. Here you can order pancake with black caviar and mascarpone and others with gourmet fillings, for example: Tambov ham with maasdam, Camembert, lingonberry sauce and bacon, shrimps, strawberries and mascarpone ^[10]
