The cocktail was invented in Calgary ( Alberta ) in 1969 by restaurateur Walter Shell to celebrate the opening of a new Italian restaurant in the city. Caesar quickly became a popular drink in Canada , where 350 million servings of this cocktail are consumed annually. This drink became the basis for many variations that led to the creation of new cocktails.

Creation History
Caesar was first cooked in 1969 by Walter Schell, manager of the bar at Owl's Nest at the Calgary Inn Hotel [1] . He mixed vodka with tomato sauce, clam juice, Worcester sauce and other spices [2] . As a result, he created a unique drink with a spicy taste, similar to " Bloody Mary " [3] .
According to Shell, the Italian cuisine inspired him to create a cocktail: he said that Venice serves spaghetti , in which there is tomato sauce and shellfish juice, forming "nectar"; it is this nectar Shell mixed with other ingredients [4] .
According to Shell’s granddaughter, his Italian roots “forced” to call the drink “Caesar” [2] . The longer title "Bloody Caesar" was coined to emphasize the similarity with "Bloody Mary." For three months, Walter improved the drink, serving it to his customers for a sample and collecting feedback from them. One Englishman who was a regular customer once said: “Walter, this is a damn good Blood Caesar!” [4] .
Popularity
Within five years after the introduction of the drink in the menu, Caesar became the most popular cocktail in Calgary [4] . It is widely known in Western and Eastern Canada [5] . In 2009, a petition was filed for the 40th anniversary of the cocktail, the purpose of which was to proclaim Caesar "the drink of the nation". Calgary Mayor Dave Bronkonier celebrated the anniversary of the drink and announced May 13, 2009, the day of “Caesar” [6] .
Caesar was first made at a time when the American company Mott's began selling a special beverage: a mixture of tomato sauce, seasonings and mollusk juice, called (from English clam - clam and English tomato - tomato ). Initially, Klamato sales were very low: only 500 cans in 1970; but after the creation of Caesar, the sales of Klamato grew dramatically, as this juice is one of the main ingredients of the drink. 70% of Klamato is sold in Western Canada [7] . Presumably, more than 350 million portions of Caesar are consumed annually [8] .
In the United States , Caesar is usually available in bars located along the border between Canada and the United States. In other places, bartenders most often offer “Bloody Mary” [9] . In Europe, the drink can be purchased in places of large concentrations of Canadians. Despite all the marketing efforts, the drink is extremely unpopular in most countries. Manufacturers of tomato and mollusk juices have suggested that in some people the presence of shellfish in a cocktail can cause disgust [10] . For example, consumers in the United States fear that there may be too many mollusks in a drink [11] .
Caesar is also a popular hangover cure [12] [13] , but this theory has been called into question. A study conducted by the University of Toronto in 1985 showed that using Caesar while taking aspirin can help save a person's stomach from the negative effects of the same aspirin [14] .
Cooking
The preparation of "Caesar" follows the rule of "one — two — three — four": the recipe requires1-1½ oz vodka , two desh (8-10 drops) hot sauce, three desh of salt and pepper, four desh of Worcester sauce and 4-6 ounces of caesar (Klamato); it is served with ice [15] . The cocktail is prepared by the method of "rolling", which consists in mixing all the ingredients with the help of two mixing glasses. In one of the glasses are added all the ingredients in the specified order, then the mixture is poured into the other and back several times [2] . After that, the cocktail is poured into a highball , the edges of which are decorated with celery salt or a mixture of salt and pepper. Celery stalk and a slice of lime serve as a cocktail decoration [9] . The peculiarity of Caesar is that it is possible to mix a cocktail in advance and store it for a long time before use [3] .
A frequent addition is Tabasco sauce [4] . Vodka can sometimes be replaced by gin , tequila or rum ; however, Klamato cannot be replaced [16] . The cocktail in which vodka is replaced by beer is called the “Red Eye”, and without any alcohol at all - “Caesar-Virgin” or “Virgin Caesar” [17] .
Mott's holds the annual Best Caesar in the City competition as part of the International Shellfish Festival on Prince Edward Island [18] , which in 2009 presented Caesar with maple syrup and vodka with bacon [9] .
