Important cereal . Many parts of the plant, including leaves and seeds, are edible. It is eaten in India and South America , where it is known as kivicha . Lack of gluten and high protein content makes the plant valuable for celiac disease patients and vegetarians .
It is used as an ornamental plant, including in central Russia, where amaranth usually does not have time to ripen. In English-speaking countries it is known as “love-lies-bleeding” ( English love-lies-bleeding ), in the Victorian language of flowers was used as a symbol of hopeless love [3] .
