Gaggan is a molecular cuisine restaurant in Bangkok , Thailand , and is run by Indian chef Gaggan Anand. In 2017, the British magazine Restaurant named it the best restaurant in Asia, and in the list of The World's 50 Best Restaurants assigned it seventh place [1] .

History
The restaurant was opened in 2010 in Bangkok, Thailand, by Indian chef Gaggan Anand, he lived in Bangkok since 2007. Anand sought to bring Indian cuisine in Thailand to the level of French or Japanese . The restaurant is located in the building of the former town hall of the XIX century. During the preparation of the premises for opening in 2010, political protests began in Thailand, which prevented Anand from visiting the restaurant for a certain period of time [2] . However, the institution began work in December 2010 [3] .
Anand plans to close Gaggan in 2020 and open a new restaurant for ten guests, which is open only on weekends, in Fukuoka , Japan [4] .
Description
The interior decor has an iridescent color scheme of white and beige, but there are additions from neon purple lights and multi-colored decorative pillows. The dining area of the restaurant occupies two floors, which are divided into a number of small closed rooms [5] .
Prior to the opening of Gaggan, Anand worked at the molecular restaurant elBulli , Spain (three Michelin-starred ). The chef included dishes prepared using similar techniques in the Gaggan menu. Among them: coriander puree, served with chicken kebab and green pepper, the dish is called "greens with envy"; another signature dish called Beauty and the Beast, which has potatoes stuffed with figs [6] .
Recognition
In 2015, 2016 and 2017, the restaurant was recognized as the best in Thailand and topped the list of 50 best restaurants in Asia, according to Restaurant magazine [6] . Prior to this, in 2014, the restaurant took third place in Asia [2] [7] . The institution took 10th, 23rd and 7th place in the list of 50 best restaurants in the world in 2015, 2016 and 2017, respectively. It also remains the only Indian restaurant that has ever made it to the top 50 [8] [9] [10] .
Anand and his restaurant were featured in the sixth episode of the second season of Netflix 's documentary project, Chef's Table .
