Nikolai Ivanovich Kovalev (October 1913 - October 3, 2004 [1] ) - one of the founders of the Leningrad school of catering technology, a researcher in the history of Russian cuisine .

Biography
In 1935 he graduated from the Leningrad Institute of Public Food Engineers. He participated in the establishment of public catering in the besieged Leningrad. In 1945, he was arrested on false charges of treason, but acquitted by a military tribunal.
In 1957 he began scientific activity. In 1967 - head of the department at the Leningrad Institute of Soviet Trade (LIST). F. Engels. The author of several dozen works on the technology of public catering, prepared more than 30 candidates of technical sciences. In 1991, at the age of 78, he defended his doctoral dissertation.
Scientific activity
In 1977, M. Medvedev talks about the activities of a young scientist in his book “The Country of Cooking”: Leningrad scientist N. Kovalev restored the recipe for many forgotten foods. In particular, Kovalev recovered and studied the Thursday salt recipe.
