Kishr

Qishr (Quishr) - dried pulp and peel of the fruit of a coffee tree of a botanical type arabica . In Spanish-speaking countries, as well as in international trade, the Spanish product name is often used - cáscara .

When processing a ripe fruit of a coffee tree, the flesh and peel are separated from the grains . Grains are sorted and classified according to the requirements of exporters.

There is no unified system for classifying coffee beans in the world, but in many countries, coffee exporters have their own very clear coffee gradation systems in terms of grain size and quality, processing method, botanical appearance, and other characteristics. Cascara (kishr) is not coffee in the classical sense, but a separate product of the coffee industry.

This rather rare product most often comes to the Russian market from the countries of South America, in particular from Costa Rica , together with high-quality coffee varieties from this country.

Cascara (kishr) is dried separately and you can make a drink from it in the same way as ordinary tea is brewed. Dried pulp is poured with boiling water and left to stand for several minutes. It tastes like a fruit drink that is neither like tea nor regular roasted coffee.

In some countries and cultures, various spices, honey or sugar are added to the drink.
