Urbech ( cum . Urbech, cf. darg . Urbesh, Avar. Urba , Lax. Turt , Lezg. KӏepI , Chech. War ) - thick liquid mass obtained from pounded roasted or simply dried seeds of flax , hemp , sunflower , pumpkin , apricot pits or nuts. In the traditional cuisine of the peoples of Dagestan, it is used to prepare the sweet dish of the same name (with honey and butter ) as a nutrient to maintain strength in the treatment of diseases [1] [2] .

Application
Sweet Dish
To prepare a sweet dish, Urbech is mixed with honey and melted butter. The proportions of Urbach / butter / honey are approximately equal, adjustable to taste. The resulting dish is eaten in liquid form as sweet (usually with water or tea), seasoned with porridge, or cooled in the refrigerator and eaten, spreading it on bread.
Nutrient and tonic
Urbech is used not only as a delicacy, but also as a nutrient and tonic, as well as in the treatment of diseases [3] . Bread with urbechem and water allows you to quickly restore strength and easily carry high physical exertion in mountain conditions [4] [5] .
Medicine
A mixture of Urbech with goat fat, which is used as a remedy for colds, makes compresses (for boils, bruises, etc.) [6] . The use of Urbech in traditional medicine in one of Darginsky villages ( Tsudahar ) is reported [7] :
Today, Urbech is widely used ( cluttar Urbesh ) - a ground mass of flax seeds mixed with sugar, and Urbeschmitli - Urbech with butter in the treatment of cough, broncho-pulmonary diseases, gastritis , ulcers and skin diseases (heals pustules, ulcers and pr ). In terms of its composition, Urbech is almost a universal remedy for the treatment of any disease. A large amount of vitamins, thanks to the freshness of the product, flaxseed oil and the viscosity of the mass bring immediate effect with regular and timely use even in the treatment of such complex diseases as a stomach ulcer.
A walbech of walnut has a whole bunch of useful properties: strengthens the body, enhances defenses, tones, cleanses the blood, dilates blood vessels, has anti-inflammatory, bactericidal, diuretic, choleretic, stimulates appetite, improves digestion [8] .
Cooking
Roasted or simply dried seeds of hemp , flax , sunflower or apricot kernels (individually or in a mixture) are ground to isolate the oil and to obtain a thick liquid mass. It is believed that the seeds should be rubbed with stone mill circles in the best way so that they do not turn into powder, but separate their own oil. [9]
Etymology
The word Urba 'ground flaxseed', 'Urbech' in the languages of the peoples of Dagestan, is a Turkic borrowing . The most likely source was the Turkic word 'barley', cf. Chuvash Urba , Kumyk Arpa , etc .; judging by the form of the word in the Dagestan languages, it may be Bulgarism. In Turkic languages there is also a sounding, but etymologically, most likely, unrelated word with the meaning 'coarse flour', cf. Kumyk Urpa , etc. [10]
