Chess gypsyzigus

Hypsizygus tessulatus , or Buna Simeji is an edible mushroom from East Asia . It is also grown in temperate climates in Europe, North America, Australia and is sold fresh. In nature, it grows on trees.

Hypsizygus tessulatus ( Bull. ) Singer , 1947

There are two types:

  • Buna-shimeji ( ja: ブ ナ シ メ ジ ) with brown fruit bodies;
  • Bunapi-shimeji ( ja: ブ ナ ピ ー ) with white fruit bodies.

Cooking

Shimeji has a bitter taste that goes completely away when cooked. Ready mushroom has a slightly crunchy texture and nutty flavor.
