Various cheeses can be used for making, for example, kefalotiri , feta or chalumi . The name of the dish comes from the Greek name for a two-handled griddle, on which cheese is usually fried (in olive oil ). When frying, additional ingredients may be added, such as shrimps and mussels . The finished dish is usually served with a slice of lemon and bread.

In the American and Canadian restaurants of Greek cuisine, the custom of serving “flaming Saganaki” to the table, which is poured with fresh lemon juice, has developed. It is believed that this rite originated in 1968 in the Parthenon restaurant in Chicago [1] .
