Cooked Tehate

Tehate ( Spanish: tejato ) is a non - alcoholic drink consisting of hot cocoa , corn , cinnamon and fragrant fruit seeds.

Beverage History

Traditionally produced in the Mexican state of Oaxaca . The Mishtek and Zapotec Indians loved this drink very much and have been making it since pre-Hispanic times. It is still very popular among these peoples, especially in rural areas. The drink is also very popular in Oaxaca and surrounding areas.

The Zapotec Indians called this cocktail “flour water”, or according to another version, “water flour”.

Cooking Method

Tehate is made from cocoa beans , corn, cinnamon and toasted fruit seeds Pouteria sapota and Quararibea funerbis . All this is finely chopped into a paste, water is added and sweetened with a small amount of sugar syrup . When the paste is ready, the cocoa rises, forming a pasty foam. The drink is served cold.
