History

Schneider Weiss wheat beer has been brewed since 1872, when the founder of the company, Georg Schneider, acquired the old Munich Weisses Brauhaus brewery and received a beer license from the Bavarian king Ludwig II . In 1927, the owners, who are still descendants of Georg Schneider, expand their business and create breweries in Kelheim and Straubing . After the brewery in Munich was destroyed in 1944 by the bombing of the Allied aircraft, the entire production was moved to Kelheim, where beer is still being produced.

Awards: Australian International Beer Awards - Gold Medal (2008), Silver Medal (2006, 2009, 2010), Bronze Medal (2011).

Schneider Weisse Varieties

Manufacturing Technology

Schneider Weisse G. Schneider & Sohn GmbH brewery produces only top-fermented wheat beer . The bookmark contains 60% wheat malt and 40% barley malt. The exclusively boiling method of mashing malt and open fermentation are used . The main fermentation takes from 5 days for the main varieties to 8-9 days for strong. Descent is done at 17 ° C, fermentation takes place at 22 ° C. During fermentation, suspensions are manually removed from the surface of the beer. At the end of the fermentation, the beer is cooled to 12 ° C and then sent for partial separation. 80% of the product passes through a centrifuge, where the yeast is removed, and is reconnected with 20% of the remaining unfiltered beer in the buffer tank. Beer is only 2-3 hours in the buffer tank. That is how much time is required for bottling the entire batch. The cleanliness of the equipment and the refusal to reuse the yeast allows pouring beer into containers without pasteurization with maturation and maturation in bottles or kegs, while guaranteeing a long shelf life. After bottling, the products are sent to a warehouse, where at a temperature of 17 ° C it is processed for 21 days before being sent to customers.
