Štramberk ears

Štramberské uši ( Czech Štramberské uši ) is a pastry made from gingerbread dough with honey and a set of spices (cloves, cinnamon, anise and so on), the exact composition and volume fractions of which were kept secret for a long time by culinary specialists from Štramberk . In 2007, the European Commission assigned the product the status of PGI (Protected Geographical Indication) [1] .

Legend of Origin

According to legend, the Štramberk ears came into being after 1241, when during the Western campaign of the Mongol Empire this city was besieged by a large army of Tatar-Mongols. Subsequent heavy rains helped the defenders. They destroyed the dam near the ponds where they raised fish, and directed the water flow to the enemy camp. The enemy retreated. On the site of his parking lot were found many bags with human ears, which the conquerors sent to the khans Batu and Kadan as evidence of their victories [2] [3] . In memory of the murdered Christians on Ascension Day in Moravia they began to bake this confectionery product, which is currently usually consumed with ice cream, whipped cream or fruit puree [4] .

Recipe

Melt the honey, add oil and add all the spices. Flour is introduced into a homogeneous mass and mixed well once again. The resulting dough settles for two days, after which it is rolled out and cut out circles. Bake on a baking sheet, greased with oil, at a temperature of 180 degrees for about five minutes until golden brown. Warm circles turn into tubes. Store in a dry place to prevent softening of the product. If you keep the classic recipe from one kilogram of dough should get 120 "ears" [2] .
