Fruit soup ( Swedish. Fruktsoppa [1] [2] , Swedish. Blandad fruktsoppa (mixed fruit soup) [3] ) is usually made from dried fruits and served for dessert [2] [4] [5] [6] [7] [ 8] . Also referred to as “cold fruit pudding ” [9] . Fruit soup is a traditional dessert in Sweden and Norway [8] . The dish is served hot or cold [2] .

In winter, there are no fresh fruits in Scandinavia , therefore, dried fruits are used to prepare various dishes. One of the ways to eat dried fruit is fruit soup [4] . In the Scandinavian countries, fruit soup belongs to the staple food and belongs to the traditional Scandinavian cuisine [4] [10] . Fruit soup served during the Christmas holidays [11] [12] . Dish is sometimes included in the buffet menu [13] . Baking is offered to the soup, for example, biscuit pastry [12] .
Ingredients and Preparation
Dried apples, dried apricots, pears [14] , raisins, currants [15] , lingonberries, prunes [4] , cherries [2] , cloudberries , princesses [16] , peaches [5] are used to make fruit soup. Soup is supplemented with tapioca , sago , red wine [14] , sugar, lemon juice [17] , cinnamon and salt [2] [4] [15] . Dried fruits and other ingredients are soaked in water and boiled until thick [2] .
Soup can be served hot or cold, cooked pre-cooled soup can be warmed [18] . The taste of the soup becomes better, if you let it brew for several hours before serving, during which time the flavors of its products better connect with each other [17] . The dish can be prepared in a slow cooker [5] [14] .
