Toulouse MuseumIts grains are used in Greek cooking to prepare a dish called “fava santorinis” ( Greek Φάβα Σαντορίνης [2] , fava santorinis [3] ), which is essentially a variant of pea puree. This plant, cultivated on the island of Tira (or Santorini) , has received PDO (Protected appellation of origin) status for its specific taste.
For more than 3,500 years, bean cultures of the Chin genus have been cultivated in Santorini and the neighboring islands. The peculiar ecosystem that has developed due to the volcanic activity on the island, the ashes, the porous soil, the combination of the sea humidity and the dryness of the air give these beans a unique taste. In good weather, farmers can get up to 800 kilograms of beans per hectare. But crops can be destroyed by drought or by strong winds that break the ovaries before they give grain. Crop production in this way makes the harvest quite expensive. The cost of 1 kilogram for the final consumer is about 9-10 Euro .
To make puree Fava Santorini, peas are presoaked for two hours in cold water, then boiled for 35-40 minutes with shallots and thyme leaves until the texture is smooth. Water is drained into another container. Peas are pounded and served the resulting mass on a plate with finely chopped onions and olive oil, adding the remaining broth if necessary [4] . Sometimes onion is cooked before boiling with peas, and lemon juice, capers, and parsley are added to the prepared dish [5] .
