Windsor Red , also Windsor Red cheese is a semi-hard British cheese made from pasteurized cow's milk [1] . By its properties, this type of cheese resembles Cheddar cheese [2] , the differences between them are that the Red Windsor is prepared with some additives. Cheese is made in one of the Leicestershire county butter farms in England .

Manufacturing
During the preparation process, during curdling, the cheese mass should settle slightly. After that, it is cut into small pieces and cooked for 20 to 40 minutes [3] . After that, the mass is placed under the press. This process increases the acidity of the cheese. When the cheese is almost ready, add red wine [2] or elderberry liqueur to it and put it back under the press. So it is maintained for a short period of time. Cheese is being prepared for Red Windsor according to the same recipe as for Cheddar cheese.
Description
The texture of the cheese is from hard to creamy and crumbly with pinkish marble patches with a wine aftertaste. For 100 grams of cheese mass accounts for 30 grams of fat [1] .
