Content
History
Cheese is produced at the Pierre Ki Vir Abbey. The monastery has existed since the 1850s, however, the soft cheeses of this abbey gained fame in the 1920s [1] [2] .
Manufacturing
Cheese is made all year round from raw milk of 40 cows from the herd of the abbey, 12 of 85 monks are engaged in the preparation of cheese. The milk is fermented for two weeks, after which it dries for two months. During ripening, the cheese crust is washed with brine [2] [3] .
Young cheese is used as food [3] .
Description
The cheese heads are in the form of a flat disk with a diameter of 10 centimeters, a height of 2.5-4 centimeters and a weight of 200-350 grams. The head is covered with a natural thin relief crust of red-brick color. Under which is a dense elastic pulp [2] [3] .
This cheese has a bright brackish and sour taste, the so-called "rustic", taste and aroma. It is used both as an independent dish, and as part of other dishes, for example, dishes prepared on the grill. It is combined with red burgundy wines [2] .
