Larousse gastronomique

“Larousse gastronomique” ( Laruss gastronomic ), “Gastronomic encyclopedia Laruss” - gastronomic encyclopedia ( cookbook ). The book is mainly devoted to French cuisine and contains recipes, biographies of famous people, articles on the history of gastronomy, cooking techniques and cooking terms. The first edition contained a small number of non-French dishes, in later editions their number increased significantly. Encyclopedia translated into 8 languages [1] .

Content

History

The first edition was published in 1938 under the editorship of Prosper Montagnier and with a preface by Auguste Escoffier and Fileas Gilbert ( fr. Philéas Gilbert ). Gilbert also helped in creating the encyclopedia. Since he, along with Escoffier, was a co-author of , this led to a partial coincidence of the content of the two books. Escofier noted when asked to write a preface that he could “see with his own eyes” and “Montagnier cannot hide from me that he took“ Le Guide ”as the basis of his new book and definitely borrowed many recipes.” [2]

The next three editions in French came out in 1960, 1967, 1984, edited by Prosper Montagnier and culinary columnist .

The fifth edition of 1996 underwent a major update, which was carried out under the patronage of the gastronomic committee led by chef . The book was supplemented with recipes and articles about products from around the world.

Since the sixth edition of 2007, the encyclopedia is called Grand Larousse gastronomique . She also came out under the patronage of the gastronomic committee with Joel Robuchon at the head.

The next edition of the French encyclopedia was published in 2012.

The first translation of the encyclopedia into Russian was made by the publishing house "Publishing House of Gastronomic Literature" Chernov & Co. ° "from the last for 2007 sixth French edition. The translated edition consists of fifteen volumes, the production of which took almost 10 years: the first volume was released in 2007, the 15th in 2016. It contains over 4000 dictionary entries, more than 3000 of them are recipes, and more than 6000 are illustrated illustrations [1] .
