Pashtel de nata

Pastel de nata ( port. Pastel de nata ) or pastel de Belen ( port. Pastel de Belém ) - dessert , a cup cake made of puff pastry with custard [1] . Distributed in Portugal and in countries located on the territory of the former Portuguese colonies : Brazil , Angola , Mozambique , East Timor , Goa , Macau and others, as well as in countries where the number of immigrants from Portugal is significant ( Canada , Australia , Luxembourg , USA , France and others).

History

Pastel de nata cakes were invented by Catholic monks at the Jeronimos Monastery ( port. Mosteiro dos Jerónimos ) in the Santa Maria de Belem community in Lisbon until the 18th century. In those days, the monasteries used egg whites to starch clothes, in particular, the nuns' vestments. The remaining yolks went to make cakes and pastries. Recipes for sweet pastries and pastries spread throughout the country [2] .

After the disappearance of religious orders and in anticipation of the closure of many monasteries after the Portuguese Revolution of 1820, the monks began to sell pastel de nata in a nearby sugar factory in order to get at least some kind of income. In 1834, the Jeronimos monastery was closed, and the owners of the sugar factory bought the cake recipe. In 1837, they opened the Pâtel de Belem factory, which produces famous pastries today [1] [2] .

Recipe

A simple cake recipe is used with slight differences in different pastry shops (pastels) in Portugal. Confectioners vary the shape of the cup from the dough, change the composition and density of the filling. It is claimed that the old recipe is known only to the historical pastelaria in Belem [1] .

For custard, milk is boiled with a stick of cinnamon and a lemon peel , brewed with flour mixed with cold milk, sugar and water syrup separately added, kneaded, filtered and cooled, then egg yolks are introduced. Puff pastry is distributed on the walls of muffin tins, filled with cream and baked in a hot oven. Ready cakes are sprinkled with cinnamon and powdered sugar and served hot [1] .

Pashtel de Belem won the 15th place in the ranking of the most delicious delicacies of the world, held by The Guardian [3] . As part of the gastronomic festival in Lisbon, they annually taste and choose the best pastel de nata. In 2011, the cake was named one of the seven gastronomic wonders of Portugal [1] .
