Puttu

Puttu ( Malayal. പുട്ട് , V.-Panj. ਪੁੱਟੂ , Sinhala. පිට්ටු , there. பிட்டு ) - a traditional dish of the Indian regions of Kerala , Tamil Nadu , Karnataka , as well as Sri Lanka , served for breakfast [1] . The name puttu or pittu is translated from Tamil as "portioned". The dish is a cylinder of steamed sticky rice, boned in grated coconut. Puttu is especially popular in the Indian state of Kerala and Sri Lanka, served with palm sugar , chickpea curry or banana . In northern Kannada, it is served with ghee [2] , meat soup paya or lamb curry [3] . In Kerala, the dish is given the status of national.

Composition

Puttu is prepared from coarsely chopped rice, grated coconut and water [4] . Rice is often flavored with zira or other spices . In Sri Lanka, they usually make a meal of wheat flour or red rice flour without adding zira. In northern Karnataka, masala with flavored lamb or shrimp coconut flakes is added to the mixture.

Cooking

Puttu is cooked by steaming rice. Before steaming, rice is added water for rice with coconut to achieve a soft, elastic consistency and spice [5] .

For cooking, a special steel double boiler Puttu kutti ( puttu kutti) is used, divided into two parts. Water is poured into the lower part, and rice mass and grated coconut are layered in the upper part. Then rice with coconut is steamed [6] .

Other types of steamers combine a steel bottom and rice compartments made from bamboo or coconut shells . Traditionally, kutti kutti were made from coconut shells, to which bamboo rods were attached from above.

Putta is also cooked in peculiar deep frying pans with trellised lid, pressure cookers and, in the Malay archipelago , in hollow bamboo stems.

Often putti is served with liquid dishes, for example, various curries (chicken, chickpeas, fish, etc.) and lentil cakes papadam [7] . Also, puttu is usually served with bananas, mangoes , jackfruit and plantan . In some regions of Kerala, it is served with sweet black coffee . In Tamil Nadu, putta is served with grated coconut, palm or cane sugar , or sweet coconut milk . In Sri Lanka, puttu is usually eaten with curry with entrails , meat or fish curry, coconut milk and spicy sambal sauce.

There are options for the preparation of putta from wheat or corn flour and tapioca [8] . Layers of grated coconut are also replaced by curry eggs [9] or bananas [10] . The putta is not always prepared in a cylindrical shape; in a round form, the dish is called maniputu .

In the marine regions of Southeast Asia, puttu is usually prepared in hollow bamboo stems. In Indonesia, such a dish is called kue puttu , in Malay - putu bambu , and in Tagalog - puto bumbong . In this region, it is customary to prepare a putta from rice flour stained with pandan leaves [11] , filled with palm sugar, steaming the pie in bamboo tubes. Serve this option with pieces of fresh coconut. In Indonesia, kue putu is often sold on the streets along with clepon rice cake, which is actually a kue puttu of a round shape.
