Taralli ( Italian tarallo , plural taralli ) or Taralini ( Italian tarallino plural tarallini ) - a bakery product of Italian cuisine , similar to dryers or bagels . Distributed in the southern half of Italy in the regions of Apulia , Calabria , Campania , Sicily , Lazio , Molise , Basilicata [1] .
Taralli can be sweet or savory. Sweet taralli can be coated with sugar icing , spicy taralli seasoned with spices . Sweet and simple taralli are often eaten by dipping in wine. Tarallini are smaller in comparison with Taralli.
Cooking and Varieties
There are many options for preparing taralli, which also vary from one region of Italy to another. The main ingredients for the dough are flour, water or wine, olive oil or lard , salt, sometimes an egg or yeast can be added. The dough for spicy taralli can be seasoned with onions, garlic, sesame seeds , poppy seeds , almonds , fennel seeds, black pepper, red pepper and other spices or just salt. Sugar, vanillin , cinnamon , zest , honey , chocolate are added to the dough for sweet taralli. Traditionally, a ring or oval of 10-12.5 cm is formed from the dough in a circle, in the case of tarallini - 3.8-7.8 cm.
Taralli is immediately baked in the oven or, like dryers, pre-boiled in boiling water and only then baked. Sweet taralli can be coated with sugar glaze, which gives them a white color. In a variant of sweet taralli from Avigliano , Basilicata region ( Italian: tarallo aviglianese ), icing is flavored with anise . Ready-made taralli are stored in sealed packaging for several months. There is a variant of sweet taralli, which is deep-fried and served with sweet dessert wine . This version of taralli is not stored for long.
Skaldatelle , scaldatelli ( Italian: scaldatelle , scaldatelli , in the scallatìll ' ) is a type of taralli in the form of an elongated ring, which is made from dough from flour, sometimes eggs, butter, salt and fennel seeds. Scaldatelli are boiled in water, dried and then baked. Distributed throughout the south of Italy, traditionally prepared in the central part of Campania, where cereals are grown. The name comes from Ital. riscaldati are heated because they are heated and boiled in water before baking. In addition to the traditional recipe for scaldatelli with fennel, there are options with potatoes, sesame seeds, onions, olives, capsicum, tomato, pizza flavor [2] [3] .
