Telemea

Telemea is a creamy white cheese made from cow or sheep milk that is produced in Romania. [1] Cheese may have a different water content, which makes it either semi-soft or creamy. It has a pleasant, slightly sweet, sour and salty taste, which becomes more pronounced when the cheese matures. It is used as table cheese for snacks, salads, various dishes (for example, omelets, pancakes, pies). For the production of telemea, the rennet extract is added to the milk. The most commonly used cow and sheep milk, less goat or buffalo. The resulting cottage cheese is placed in cheesecloth under a press, and then cut into square pieces. Then the cheese is aged in brine for several weeks.
