Lunazin

Lunazin ( born Lunasin ) is a bioactive soy peptide consisting of 43 amino acids , which has anti-tumor and anti-inflammatory properties [1] [2] [3] [4] . The name of the peptide was taken from the Filipino word Lunas, which means "treatment" [5] .

Although it was previously assumed that this peptide is also found in the seeds of a number of cereals [6] , in later studies of the genome and immunological studies it was not possible to find it anywhere except in soy [7] .

Molecular biologists from Mexico began to study bioactive peptides in amaranth proteins. And in 2008, they discovered the lunazin peptide, which was previously identified in soybeans, in a shiritsa.

Methods have been developed for the isolation of highly purified lunazin from white seed coatings, a by-product of soybean processing [8] . In addition, a method is proposed for producing a lunazin-containing fraction by extraction of soy flour with 30% ethanol, followed by precipitation with calcium salts. In just 2 hours, this method allows you to obtain from 100 grams of flour about 3 grams of a biologically active substance that can inhibit the expression of a number of pro-inflammatory cytokines [9] .
