Edible oil is a type of edible fat . Used by humans for food. Edible oil can be of vegetable, animal or synthetic origin. It is used for frying, baking and other types of cooking. It is more often used in cooking and seasoning, which does not need a high temperature, such as salad dressings.

Edible oil at room temperature is usually a liquid, although some oils that contain saturated fats, such as coconut oil , palm oil and palm kernel oil , are solid. The most common type of edible oil is vegetable.

Chemically, this is determined by the presence of a double chemical bond in the liquid oil molecule, while in solid oils all bonds are saturated. It is on the latter that the process of production of margarines is based - the elimination of double bonds in liquid oils and the conversion of the latter into solid fats.

Edible oil can be seasoned with aromatic foods such as herbs, chili peppers or garlic.

Benefit and harm

Governing bodies, such as the Food and Drug Administration, are setting guidelines for the appropriate amount of fat, a component of daily food intake. The recommendation is that 20-35% of all daily calories should come from fats (oils), with 10% or less saturated and most unsaturated.

While the consumption of small amounts of saturated oils is common in the diet, a meta-analysis found a significant correlation between high consumption of edible oils and LDL blood concentration, which is a risk factor for cardiovascular diseases. Other meta-analyzes based on various studies have found a positive or neutral effect on the consumption of unsaturated fat oils instead of saturated fat oils.
