Fougere ( French Le Fougerus , from French fougère - fern) is a soft cheese from the Brie cheese family, a distinguishing feature of which is a fern leaf that adorns the head of cheese.

History
Initially, the Fougeres cheese was produced on small farms for their own consumption [1] . From the beginning of the 20th century, it was also made for sale, and in the 1960s, the Rouzer cheese factory ( Turnan-en-Brie , department of Seine and Marne ), which is currently the main producer of this cheese, started production of Fougere.
Features
Cheese Fougere is made from raw cow's milk and covered with a crust of white mold ( Penicillium candidum ) [3] . Head diameter 16 cm, height - 4 cm; fat content of 45-50% [1] . The cheese tastes tender, sweet, with a salty aftertaste [1] . The famous fern leaf, which distinguishes Fougeres among other brie cheeses, is superimposed during the ripening process and serves both gastronomic (gives the cheese an additional flavor) and aesthetic purposes [3] .
It is combined with white wine, champagne [3] , burgundy wines and burgundy [1] .
