History

Sauer cocktails came directly from the punch invented in the 1620s and 1630s (presumably by sailors who improved the taste of distilled alcohol by adding citrus juice). By the middle of the 19th century , many local variants of punch appeared, they stopped making and serving them in large common dishes, and they began to cook and serve them individually [4] . As early as 1858, the name was mentioned in the New York Times for granted, without further explanation. [one]

Sauer cocktails are described in Jerry Thomas’s book, How to Mix Drinks, The Bon Vivant's Companion, published in 1862 [5] . D. Thomas also points to the origin of Sauer cocktails from punches. [1] To date, many Sauer cocktails are included in the list of official IBA cocktails : White Lady , Whiskey Sauer , Daiquiri , Caipirinha , Kamikaze , Margarita , Pisco Sauer , Saidkar .

Composition

Sauer cocktails were once prepared using only lemon juice , sugar syrup, and one of the hard drinks. There were at least two schools for preparing Sauer cocktails - those who made cocktails that were relevant to their name, with an expressive but sour taste (Sour - sour (English)) and those that made Sauer rather sweet, with a little lemon juice and well balanced sweetness. [1] Already at the end of the 19th century, the recipe for these cocktails was not so strict. For their preparation, a variety of acidic juices and their mixtures are used. Along with strong alcoholic drinks , wine is also used, instead of sugar syrup - other types of syrups, liquors , liquors , etc. [2]

Cooking

Sauer cocktails are prepared in a shaker . They are served, as a rule, in a glass specially designed for these cocktails. Particular attention is paid to their decorative design, decorating a glass with ice, slices of lemon or orange , cherries , etc. They drink sour cocktails through a straw.
