Roomano

Roomano ( Dutch: Roomano roʊ̯.ˈmaː.noʊ̯ ) is a hard Dutch cheese like Gauda . The main difference between Roomano and Gouda is pasteurization. Roomano contains 48% fat and more, while Gouda always has less than 48%. Cheese first appeared in Friesland , northern Netherlands. Roomano is made from cow's milk and matures from four to five years. The cheese has a very peculiar taste, it is salty and sweet at the same time, with hints of iris . Roomano is a very rare cheese, it is difficult to find even in the Netherlands themselves. It is often confused with Italian cheese Romano (cheese) [1] .
