History
Until the middle of the XIX century. hemp oil played in the diet of the eastern Slavs the same role that sunflower plays now, and fried seeds were used instead of sunflower seeds .
Properties
Hemp oil has a greenish tint; depending on the preparation methods, it can be dark and light. Iodine number 145-167. Specific gravity 0.925-0.928 (15 °).
Hemp oil is a drying oil .
Composition
Hemp oil contains (%) 5.8-9.9 palmitic , 1.7-5.6 stearic , 6-16 oleic , 36-50 linoleic , 15-28 linolenic acids.

Useful Properties
The content of omega-3 and omega-6 - polyunsaturated fatty acids recommended for the prevention and treatment of diseases of the cardiovascular and nervous system, obesity - surpasses linseed oil . It is rich in antioxidants , phytosterols , fat-soluble vitamins and minerals.
- In food
- It was one of the most popular, vegetable oils beloved and widely used in the culinary of Russia. Traditionally has been of high importance for food USSR industry, as evidenced by the fountain “Friendship of Peoples” built at VDNKh in 1954, where along with sunflower inflorescences, hemp leaves are also present. It is used as a high-quality oil for dressing salad and other cold and hot vegetable dishes, in marinade and sauces. It is also used in the preparation of soups. Cannabis oil is completely absorbed by the body in its raw form.

Currently, due to the country's ratification of the UN Convention on Narcotic Drugs in 1961, oil production is difficult due to strict requirements for the cultivation of hemp and the protection of its crops [1] .
