Gingerbread is a gingerbread flavor. Often, honey or molasses ( molasses ) are used instead of sugar to prepare this dish [1] . Gingerbread cookies can vary significantly in consistency (from soft and moist bread to ginger biscuit ).

History

Gingerbread was brought to Europe in 992 by the Armenian monk Gregory Makar . After living for 7 years in Bondaroye (France), he taught French Christians the art of baking gingerbread. Gregory died in 999 [2] .

In the 13th century, gingerbread was brought to Sweden by German immigrants. In the 15th century, a guild of craftsmen was established in Germany who controlled the creation of gingerbread [3] . Findings from Wadsten Abbey show that in Sweden, nuns used gingerbread cookies to combat indigestion.

The first trade documents found showing the sale of ginger biscuits date back to the 17th century. At that time, they were sold in monasteries, pharmacies, and farm fairs. In medieval England, it was believed that gingerbread cookies have medical properties [4] .
