History

Chipotle's first institution near the University of Denver campus

Company founder Steve Ells graduated from the Culinary Institute of America in Hyde Park, New York. He then worked as a cook (line cook) with chef Jeremy Tower in the Stars restaurant ( San Francisco ) [18] . There, he drew attention to the popularity of the Takery and Mission burritos in the San Francisco Mission area. In 1993, Els, based on his experience in San Francisco [19], opened the first Chipotle facility in Denver , Colorado, at Dolly Madison's former ice cream store near the University of Denver campus , borrowing $ 85,000 from his father [14] . Ellsa's father and son calculated that the restaurant would be profitable if 107 burritos were sold daily. A month later, over 1,000 burritos were daily sold in this restaurant [20] . In 2010, the U.S. Immigration and Customs Police (ICE) inspected Chipotle's restaurants in Minneapolis and determined that some of the employees were hired by forged documents. In December, as a result of the audit, the company laid off 450 workers from its restaurants in Minneapolis, which led to protests from local groups [36] [37] . In February 2011, ICE inspected 60 restaurants in the state of Virginia and in the US capital, Washington [38], which resulted in the dismissal of 40 employees. Chipotle agreed to acquire Ells' contribution to ANGR for its amount, provided support for the activities of ANGR, and invested 2.3 million in cash [42] .

On December 18, 2013, the company announced the opening of its first pizza chain of fast food restaurants in May 2013 in Denver. Expanding Outside the US

According to an article in The Motley Fool , in October 2014 Chipotle had 17 points outside the United States, most were located in Canada and the United Kingdom, and new establishments were opened [45] .

In August 2008, Chipotle opened its first institution outside the United States in the city of Toronto , ( Ontario , Canada) [8] . The second point in Toronto and Canada was opened only in 2010 [46] . The first institution in Canada outside of Toronto was opened in December 2012 in Vancouver ( British Columbia ) [47] . By the end of 2014, all Canadian points were located in the Toronto area, with the exception of the establishment in Vancouver.

The first European restaurant Chipotle was opened in May 2010 in London . The first restaurant in Paris was opened in May 2012 [10] [48] . In August 2013, a restaurant was opened in Frankfurt [9] [49] .

In February 2013, the company had only 10 points outside the United States: 5 in Toronto, 4 in London and 1 in Paris. The spread rate in overseas countries was lower than expected. Many observers believed that food prices were too high on their territory.

All Chipotle restaurants are owned by the company, not the franchisee [50] . In December 2012, 1,430 restaurants operated in the United States and Canada, with locations in 43 states, Ontario, British Columbia, and the District of Columbia [51] [52] . The founder of the company, Steve Ells, occupies the posts of chairman and chief executive officer (CEO), [53] , he owns a 1.25% stake in the company [54] .

In September 2011, Chipotle opened an Asian fast-casual restaurant called ShopHouse Southeast Asian Grill in Washington, DC [55] . The company announced that the new restaurant “will abide by the Chipotle service format and, with regard to products, will focus on food with integrity ” [56] . Chipotle began by opening one restaurant to test business development [57] . Procurement

In 1999, in search of a solution to improve the taste of carnitas [18], Steve Ells, reading an article by Edward Behr, examined the method of concentrated animal feeding [89] , called it “terrifying” and began searching for open-range suppliers of pork. This led to an increase in prices and also sales of burritos with carnitas [54] .

Since 2006, the Florida Farmers 'Organization of Immokali Workers' Union (CIW) has been protesting against Chipotle's refusal to sign a Fair Food agreement that allows the restaurant chain to pay a penny premium for a pound of their Florida tomatoes to sponsor harvesters and only buy Florida tomatoes from farmers, complying with the Food Code of Conduct [92] . In September 2009, Chipotle announced that it would not partner with CIW and would instead work directly with farmers and packers on the east coast to increase the capacity of their tomato collectors [94] . Chief Executive Officer Steve Ells identified the dispute as a fundamental control issue stating that “ CIW wants to sign a contract allowing them to control Chipotle 's decisions about the future of food” [95] . In October 2012, she signed an agreement with CIW and became the 11th organization to join the Fair Food Program [96] .

In January, Chipotle removed carnitas from its menu in a third of restaurants. At the same time, company employees referred to problems with keeping animals found during regular inspection at one of the suppliers [63] . The company continues to use antibiotic-free steaks in its restaurants, despite the fact that in the summer of 2013 the company was forced to use “official beef” for a short period of time [97] .
