The fruit of a walnut is a nut of any tree of the Juglans family of the Walnut family, including Persian or walnut ( Juglans regia ).

Description
Fruits of a walnut represent rounded large single-seeded drupes . At maturity, the outer thick green peel dries, cracks, separates from the stone, bursts and opens. In the process of drying, the brown shell of the stone becomes hard and brittle. Under the shell is the core, usually consisting of two halves, separated by a partition. The kernels of walnuts are widely used after full ripening - are eaten as a valuable food product containing proteins and essential fatty acids . Peeled kernels of walnut seeds are covered with a thin brown shell containing antioxidants that protect the fat- rich cores from exposure to atmospheric oxygen , thus preventing rancidity [1] .
Chemical Composition
Unripe fruits are rich in ascorbic acid (up to 10%) [2] . Fruit kernels contain fatty oil (up to 60-76%), protein substances (up to 21% [2] ), carbohydrates (up to 7% [2] ), vitamins K and P , amino acids (asparagine, cystine, glutamine, serine, histidine Valine, phenylalanine). Fatty oil consists of glycerides of linoleic , oleic , stearic , palmitic and linolenic acids [3] .
Nutritional Value
Nuts have a wonderful taste and high nutritional value. Used to prepare various dishes, halvah , candy, cakes, pastries and other sweets. The nut enjoys particular popularity in the Caucasus , where it has long been considered a sacred tree.
In Eastern medicine, it was believed that walnut promotes the treatment of the brain, heart and liver.
Walnut kernels contain vitamins A, B1, B2, B3, B5, B6, B9, C, K, E, PP. The walnut fruit contains minerals of phosphorus, potassium, magnesium, calcium, sulfur, iron, aluminum, manganese, zinc. Walnuts are rich in vegetable protein, tannins, fiber, essential oil.
Walnut is an effective remedy for restoring male potency. There are many recipes related to walnuts. One of the most useful recipes for men are walnuts with honey [4] .
Unripe fruits are used to make vitamin concentrates and fortified foods. According to the memoirs of Artyom Sergeev , unripe walnuts jam is one of the favorite dishes of JV Stalin [5] . Green peel of unripe nuts is the raw material for the production of juglon .
