Sardella
Sardella , or Calabrian-style sardines [1] , also known as Calabrian caviar, as the caviar for the poor, like Rosamarina, or nudicella, is a typical Calabrian product in Croton. It is prepared as a sauce of small or medium sardines , hot pepper and ground spices, as well as salt and wild fennel seeds.
The most popular is rosamarine from barbuli, due to the natural color of these fish, their pinkish tinge and sweetish taste, while the commercial version of the anchovy-based dish is completely white.
