Sushki [1] - a dish of Belarusian, Polish, Russian and Ukrainian cuisine, which is a solid ring-shaped product made of dough (usually sweet wheat). A variety of lamb products . One of the most common snacks for tea among the Eastern Slavs.
The ingredients for the test are flour, egg, salt and water, as well as flavorings, depending on the recipe. After preparing the dough, it is cut into thin strips (no more than half a centimeter thick), twisted into a ring and dipped in boiling water. After 4-5 minutes, the products float to the surface, they are taken out of boiling water and then placed in the oven to bake [2] [3] .
Previously, dryers were usually sold strung on twine [3] , however, nowadays they are sold almost everywhere packed in bags. Until 1950, cutting of lamb products was carried out manually; later, an automatic machine for forming bagels was introduced [4] .
The name “drying” presumably means a dried product, which is a blank for the winter [5] . Products are dried in the process of baking, while drying is dried more strongly: the water content in the finished bagels, depending on the variety, is 14-17%, in dryers - 8.5-12% [6] .
The drying diameter is usually from 4 to 12 cm (bagels are usually larger than dryers). When cooking, poppy or sesame is often added to the drier, less often vanilla or nut flour.
