Alani

Alani ( arm. Ալանի ) [ɑlɑˈni] - eastern sweetness [1] . In Armenian cuisine there are seedless peaches strung on a string and dried in the sun, stuffed with crushed walnut kernels with sugar, cinnamon and cardamom [2] .

Cooking

Peaches for cooking should be ripe and hard. The fruits are peeled and fumigated with sulfur for 1-2 hours, then laid out in the sun. Walnut kernels are crushed in a mortar, then mixed with sugar and spices (ground cinnamon and cardamom are usually used, a small amount of honey may be added). When the peaches are wrinkled and dried, a stone is carefully removed from them, instead of which a nut filling is placed. You need to start dried fruit so as not to damage its walls and smooth out all existing wrinkles. So that the filling does not fall out, the edges of the peach are strongly pinched [6] . Then the peach is slightly squeezed [7] , threaded and hung for final drying [8] . Since the product is afraid of moisture, the delicacy is stored in a dark and dry place [6] .

It is possible to make alani from pre-dried apricots, just fill them with warm water and leave for about an hour, and then fill with nut filling [7] .

Alani is well kept, it is usually eaten in winter [9] , in the novel by H. Abovyan “Wounds of Armenia” is mentioned as a Pancake week [ 10] hotel [11] .
