Linz eyes (German: Linzer Augen, Linzeraugen ) - round cookies from the so-called Linz dough with a diameter of 8-10 cm.

Dough
Linz dough is a kind of shortcrust pastry and is made from flour , eggs , sugar , butter , as well as almonds or other nuts . The dough is seasoned with cinnamon and cloves [1] . Often the Linz dough is called peanut butter (German Nussmürbeteig) or almond shortcrust pastry (German Mandelmürbeteig). Linz dough is used in the preparation of Linz cake and cookies [2] .
Cooking
Circles are cut out of the rolled out Linz dough. In half circles, three (sometimes one) small round holes are made, the so-called “eyes” located in a triangle. After baking in the oven, whole circles are smeared with red or black currant jam . Circles with "eyes" fit into the jam. Until the cookies have cooled, they sprinkle with powdered sugar .
Regional Options
In Switzerland [3] , Southern Germany, and South Tyrol, the Linz eyes are often called the Spitzbube (con, scoundrel). In this case, the upper circle of the dough is cut out like a face and smeared with sugar icing .
