McDonald's in Russia

The company's first Russian restaurant opened in Moscow on Pushkin Square ( Bolshaya Bronnaya , 29) on January 31, 1990 ^[3] .

The new institution, familiar to the West, but in sharp contrast with the traditional Soviet catering , became a real sensation for the USSR: to get into it, it was necessary to stand for several hours in a queue . On the opening day, the restaurant was visited by 30 thousand visitors ^[2] , which was a record for the McDonald's network ^[4] .

The second and third restaurants were opened on Gorky Street (now Tverskaya Street ) and Old Arbat in the summer of 1993.

In the future, the McDonald's network in Russia developed at an ever faster pace. In April 1994, the first restaurant appeared outside Moscow - in Mytishchi , in 1996 - the first restaurant in Russia with the “MacAuto” function (servicing customers arriving by car) - in Moscow. In September 1996, the first restaurant opened in St. Petersburg on Kamennoostrovsky Prospect . By 1999, 50 fast-service enterprises operated ^[5] .

The company's revenue in Russia in 2009 exceeded 33 billion rubles ^[6] .

On February 18, 2008, the first restaurant chain in Siberia opened in Tyumen ^[7] .

June 7, 2013 McDonald's was opened in Syzran .

On June 28, 2013, the world's most northern McDonald's restaurant was opened in Murmansk ^[8] .

On October 4, 2013, the first franchise restaurants were opened in the new terminal of Pulkovo Airport in St. Petersburg .

In 2014, a planned refitting of a Moscow restaurant on Pushkin Square was carried out, which is why it was closed for three months. As of 2015, more than 8 thousand people a day were served there ^[9] .

July 26, 2014 opened a restaurant chain in Novosibirsk ^[7] .

On August 20, 2014, the Office of Rospotrebnadzor in Moscow, after verification, decided to temporarily close four enterprises, including the most famous first restaurant on Pushkin Square ^{[10] [11]} . Within a few months, all restaurants have restored work ^[12] .

In 2014, the planned re-equipment of 170 McDonald's enterprises in Russia was carried out ^[13] .

In 2016, the company opened a distribution center in Novosibirsk, to arrange deliveries to restaurants in Siberia.

On June 28, 2017, McDonald's launched a food delivery service in Moscow in a test mode. The order of food and drinks was made through UberEats applications, the cost of delivery was 99 rubles ^{[14] [15]} . McDonald's also began testing a new service — the ability to place an order at a table brought by the waiter. The service worked in 5 restaurants in Moscow ^[16] .

In 2017, 41 McDonald's enterprises were opened, including in the cities of Balakovo and Anapa . 5 of them were opened under the management of McDonald's franchise partners in Russia: 3 enterprises in Kazan , Tyumen and Perm from OOO SPP, 2 enterprises in Kemerovo and Barnaul from OOO GiD ^[17] .

McDonald's announced plans to open 40 more restaurants in Russia ^[17] . In the same year, the company began a change in the composition of "Happy Mil" in favor of a healthier diet. According to the new standards, the menu will not include cheeseburgers and chocolate milk, positions will be available only as an additional option. Calorie menu will not exceed 600 calories. Currently, these parameters correspond to 28% of children's menus in 20 countries where McDonald’s is presented, but they will be distributed in 120 countries. The company also intends to reduce the number of artificial colors, preservatives and flavors. The share of fat and added sugar in McDonald's products will not exceed 10%. It is planned that by 2022 50% of the children's menu will meet the new requirements ^[18] .

McDonald's completely renews all restaurants every 10–15 years. Usually, the decoration of the hall is replaced, the facade design is changed, the ventilation and air-conditioning system is modernized, electronic terminals for accepting MacAvto orders and paying for orders are installed in the hall.

The largest number of establishments is located in the capitals: 126 McDonald’s restaurants are located in Moscow , and 71 restaurants in St. Petersburg ^[2] .

As of December 2018, 660 McDonald's restaurants operate in Russia . In almost all restaurants, except shopping centers located in food courts , there is free Wi-Fi access with mandatory identification provided by VimpelCom and Enforte ^[19] .

Over 28 years of work, McDonald's in Russia received over 5 billion guests ^[20] .

McDonald’s restaurants in Russia daily serve more than 1.5 million visitors ^[20] .

By the end of 2019, a service will be available at McDonald's — the opportunity to receive your order at the table. The service will be provided at all McDonald's locations in the country. ^[21]

The interests of the network in Russia are provided by its subsidiaries, CJSC Moscow-McDonald's and LLC McDonald's. The franchise scheme for opening restaurants in Russia until April 2012 (when the first franchise for opening McDonald's at airports and railway stations was issued to Rosinter ) was not applied ^[22] . In 2015, the corporation entered into the first major franchise agreement. McDonald's restaurants will open in franchise in the Kemerovo , Novosibirsk , Tomsk regions and in the Altai Territory . Thus, the opening of the first McDonald's restaurant in Novokuznetsk , where OJSC Inrusinvest is located, with which the franchise agreement was signed, was an important stage in the development of the network in Siberia ^{[23] [24]} . Franchising accounts for more than 90% of McDonald's enterprises in the world ^[25] .

In Russia in 2018, about 100 McDonald's enterprises are managed by franchisee partners. Razvitie Rost LLC manages enterprises at Pulkovo airports in St. Petersburg and at Sheremetyevo in Moscow. LLC "Guide" develops business in the Novosibirsk , Tomsk , Kemerovo regions , the Altai Republic , the Altai Territory , the Krasnodar Territory . LLC SPP is engaged in business development in the Arkhangelsk region , Sverdlovsk region , Perm region , Orenburg region , Republic of Bashkortostan , Chelyabinsk region , Kurgan region , Tyumen region (including KhMAO and YNAO), Republic of Tatarstan , Republic of Komi , Kirov region , Republic of Mari El , Chuvashia , Udmurtia ^[26]

As of 2015, the company buys products from 160 Russian manufacturers, providing more than 98% of products ^{[27] [28] [29]} . In Russia, all components of the Big Mac sandwich are supplied by domestic manufacturers. With the exception of French fries, all the main menu items are produced in Russia ^[20] .

Meat suppliers use meat from Russian factories as raw meat ^{[27] [30] [31]} .

Belaya Dacha is one of the first enterprises with which McDonald’s signed a supply contract.

The McDonald’s HACCP system (Hazard Analysis and Critical Control Points; Hazard Analysis and Critical Control Point Analysis System) operates on the suppliers ’production. HACCP identifies any potential risks (chemical, physical or biological) at each stage of the production process and either reduces them to an acceptable minimum or completely eliminates them. Before sending the final product from the food processing and distribution center to the McDonald's restaurant, its laboratory monitoring is carried out for compliance with the physicochemical, microbiological and organoleptic indicators of McDonald's standards. The sanitary and hygienic condition of the production lines, the plant’s territory and the workers' compliance with McDonald’s standards is also monitored daily ^[32] .

Charity Projects

McDonald's is engaged in charitable activities in the framework of the Ronald MacDonald House Foundation, established in 1984. Over 31 years, over 460 million rubles have been allocated to charitable purposes in Russia ^[28] . The “Ronald McDonald House” charity foundation assisted over 210,000 children and families in difficult life situations. In 2017, about 70 million rubles were transferred to support the Fund’s projects ^[33] . For 28 years, more than 680 million rubles have been transferred to charity ^[20] .

Major Fund Projects

• fitness center “Ronald McDonald Center” in Moscow for children with disabilities. More than 80 thousand children underwent a course of treatment, having attended classes at the Center since 1996 ^{[34] [35]} .
• Free family hotel “Ronald McDonald House” for parents whose children are undergoing long-term treatment at the Children's Republican Clinical Hospital in Kazan. Since the opening, more than 7,400 adults and children have been hotel guests ^[36] .
• “Family rooms” for parents whose children receive long-term treatment in hospitals in Moscow, St. Petersburg, Nizhny Novgorod, Samara, Rostov-on-Don, Yaroslavl, Voronezh, Orenburg, Saratov, Ufa, Kazan and Cheboksary. Currently 13 rooms are open ^{[13] [37] [38] [39]} .
• The program includes practical seminars for professionals working with special children in the regions of Russia. The program includes the organization and conduct of open classes, master classes, practical and methodical seminars, sports events ^[40] .
• Inclusive children's playgrounds: in Sochi (built by the Ronald MacDonald House Charity Foundation in 2014) and on the territory of the VDNKh in Moscow. Playgrounds allow children to play together, regardless of the state of health of each child ^[40]

Sports projects

McDonald's has implemented energy and resource saving programs in its restaurants: contactless touchscreen taps for handwashing, energy saving LED lamps, waterless urinals, equipment on and off sensors, lighting and advertising, heat energy recuperators, HVAC variable power, ozone-safe refrigerants , low emission i- glass. Fryers with reduced oil use are installed in kitchens (they consume 40% less oil).

Partner McDonald's - the company HAVI uses motor vehicles on gas fuel, which reduces the emission of CO2 into the environment.

Since 2011, McDonald’s has been working with fish suppliers that have MSC certification for their products. Coffee has a certificate UTZ - an international certificate of responsibility relating to the production of coffee.

McDonald's packaging is made from cellulose for the production of paper and cardboard with a 100% guarantee of legal and approved origin. Every year the company sends for recycling more than 1,000 tons of cardboard and more than 4,000 tons of waste fat, 50% of which is recycled into biodiesel .

On average, the company allocates 70 million rubles a year for landscaping the area around its restaurants. The company is also engaged in supporting World Wildlife Fund programs: Earth Hour , Environmental Debt Day ^[54] .

As of 2018, more than 50 thousand employees work in the Russian network ^[55] . For 2018, it is planned to provide 20,000 jobs. Students make up about 60% of McDonald's employees in Russia ^[56] . A special award is paid annually for excellent performance in work and in school. The McDonald’s education support program has existed since 2001. By the beginning of 2018, the company allocated about 56 million rubles to support education.

In 2017, we launched the new program “We Grow Talents”. Students who have passed the competitive selection and working at McDonald’s have the opportunity to do an internship at the McDonald’s head office in Moscow ^[57] .
