Asirtiko

Asirtiko, Assirtiko ( Greek Ασύρτικο ) - an autochthonous (indigenous) grape variety from the Greek island of Thira (Santorin) and the white wine of the same name. Asirtiko is widespread on the arid but volcanic ash-rich lands of Tira, as well as on other islands of the Aegean Sea , such as Paros and Naxos . The variety is also cultivated in other regions of Greece, such as the Halkidiki Peninsula in the periphery of Central Macedonia [1] . On Tire there are many old vineyards of this variety (older than 70 years) and many of them are not vaccinated. These vineyards are resistant to phylloxera .

Type

The variety produces excellent wines without mixing, but is compatible for mixing [2] . The mineral profile of grapes provides a good opportunity for mixing with other varieties and recently it has often been mixed with varieties such as Sauvignon Blanc , Semillon and Málaguzia [1] . Asirtiko's clusters are large, with transparent yellow-gold peels and juicy flesh. Santorina’s volcanic soil probably has unique characteristics that leave its mark on the grape variety and turn into wine. One of these characteristics is that Asirtiko does not lose its acidity, even being very ripe. Across Greece, many dry and sweet wines are made from this grape variety, including the similar Vin Santo muscat and dessert wines. In the resinous Rezina , Asirtiko is often mixed with the less acidic Savyatiano variety [3] .
