Chipotle ( isp. Chipotle , from asth. Chīlpoctli - smoked chili ) - Mexican seasoning, which is a smoked red jalapeño pepper. Used primarily in Mexican cuisine . On a scale of churniness Chipotle Chipotle has from 5,000 to 10,000 SHU [1] , which refers to the average degree of stinginess, but is more stinging than fresh jalapeno.
Fabrication
For preparation of chipotle, red jalapeno peppers are ripened in a natural way. They are smoked on wood smoke for several days, as a result of which they, as a rule, lose 9/10 of their mass, and dry up to a state of dried fruit .
Use
Chipotle combines the natural burning sensation of jalapeno with a smoky flavor, it is often a key ingredient in Mexican cuisine. It is added to various sauces, such as mole and salsa . It is also added to soups, used for stewing meat and vegetables. Chipotle is harvested in adobo marinade.
On the basis of chipotle produce one of the types of Tabasco sauce [2] [3] .
