Canaiolo ( Canaiolo , also Canaiolo Nero or Uva Canina ) is a red Italian technical grape variety grown in central Italy, mainly in Tuscany . In addition to Tuscany, it is also found in Lazio , Marche and in Sardinia . In Umbria, there is a white variety known as Canaiolo Bianco (White Canaiolo ).

Typically, kanayolo is used in a mixture with sangiovese and colorino to make Chianti wine, and is also an important, albeit secondary, component of Vino Nobile di Montepulciano ( Italian: Vino Nobile di Montepulciano ). In the manufacture of Chianti wine, Kanayolo has always been an important component, and in the XVIII century, the share of Kanayolo in Chianti even exceeded the share of Sangiovese. Part of the popularity of this grape is due to the fact that it can be dried a little without the danger of decay, and this makes it convenient for the long-term fermentation technology known as “governo”. In the 19th century, there were recipes for making Chianti by Betino Ricasoli, which stated that kanayolo is used to improve the properties of the sangiovese, adding a fruity aroma and softening tannins . After the epidemic, the phylloxera kanayolo became less popular due to the fact that it did not graft very well on the rhizomes of American grapes. As of 2006, the Kanayolo vineyards had an area of 3,000 hectares . Tuscany winemakers are making some efforts to improve the variety and return the grapes to their former glory.
