History
It is believed that the dish was first prepared by the London-based company Fortnum & Mason in 1738 [1] [2] . According to another version, the authorship of the dish is unknown, and the recipe goes back to the dish of the Mughal cuisine of Nargisi Kufta [3] .
In printed form, the recipe for this dish is first found in a book by Maria Rundell The New Home Cooking System, 1809 edition. In this and later cookbooks of the 19th century, ready-made eggs were recommended to be served hot with sauce [4] . Now it is used in cold form, in particular, as a snack on picnics .
During the Second World War , during the days of rationing , a variant of the recipe arose in which the minced meat was replaced with mashed potatoes .
Regional Options
