Tamale ( English tamale [tə'mɑːlɪ], Spanish. Tamal ) is a Mesoamerican dish; steamed dough from nixtamalized corn flour, wrapped in corn (or banana) leaves. Before use, the leaves are removed. Tamale may contain stuffing with minced meat, cheeses, fruits, or vegetables, often with chili peppers.

Tamale is a dish that has come from time immemorial. It is believed that it was tamale that the hospitable Indians offered to try the conquistadors who arrived to the west.
