Svan salt ( Georgian .ანური მარილი - Svanuri marili ) or a mixture from Svaneti is a dry spice mix traditionally used in Georgian cuisine . The mixture is a universal seasoning and is used for the preparation of soups, sauces, meat and fish dishes, vegetable salads, marinades and salting [1] .

Composition
Svanese is obtained by mixing table salt with ground spices in certain proportions. The composition of the mixtures may vary.
The main set of spices:
- salt
- blue fenugreek (uzo-suneli)
- garlic
- dill seeds
- coriander seeds
- hot red pepper
- wild or mountain caraway
- Imereti saffron (zapran, zafran, quavili queti, marigolds)
