Sentia ( Japanese 煎茶 Sentia ) or Sencha in inaccurate transliteration is a variety of green tea produced in Japan . The name comes from the expression "tea decoction" ( Japanese 煎 じ 茶 Senjitya ) [1] .

Sentia is one of the most popular teas in Japan (about ¾ of the volume of green teas produced in the country). Senti production centers are the prefectures of Shizuoka , Kagoshima , Mie , Nara , Kyoto , Saga , Fukuoka , Miyazaki , Aichi . Especially appreciated is the look of sentia syntha ( 新 茶 , collection of April, the first month of the season) for softness and special taste. Late harvests are more astringent, have a rougher taste and less pronounced aroma.
After the tea leaf is harvested, it is delivered to the factory, where it is steamed in order to avoid oxidation, twisted into a cylindrical shape, which gives it the appearance of needles, dried with dry air [2] .
